One of my favorite parts of recipe creating is going back to the recipes favorites that I used to make as a child and creating gluten-free/refined-sugar free/healthier versions of them! Specific foods definitely evoke emotions and memories for me. Plus, I feel like I get to share a part of my childhood with my husband too!
This is one of those recipes. My siblings and I used to make these no-bake chocolate oatmeal cookies with our mom and I always remember them so yummy - albeit very sugar filled, so this is my healthier but still amazingly delicious version! Enjoy y'all!

2. Remove from heat and mix in your choice of 1/2 c almond butter or peanut butter.
3. Add the vanilla, salt and oatmeal (in that order) and mix well.
4. Place wax paper or parchment paper on top of a cookie sheet and drop the mixture by spoonfuls onto it, sprinkle with shredded coconut (optional) and then put into the freezer until firm. Enjoy!
