Sweet Potato Bacon Egg Hash

Every time Matt comes home from working in Texas (he gets sent there a lot for CrossFit HQ), he RAVES about this little restaurant named "Kozy Kitchen" and their "Bowl of Doom" (sweet potato, ground beef, eggs, avocado, etc.), so I decided to make my own variation of it! This is one of my absolutely FAVORITE breakfast meals now. It is just SO vibrant in flavor and such a perfectly balanced meal of carbs, fats, and protein! 

Sweet Potato Bacon Egg Hash

Prep Time: 5 minutes                     Cook Time: 15 minutes                    Servings: 2


2 large organic sweet potatoes, peeled and cut into small cubes (if you want to reduce the prep time in the morning, you can do this the night before and store the cubes in a bowl of water in the fridge)

6 pieces of bacon (see my Ingredients Recommendation List for what's important to look for in buying bacon)

4 cage free, organic eggs

2 Tbsp. Olive Oil

2 large handfuls of organic spinach

Salt, Pepper, and garlic powder to taste


*Note: If you want to increase the servings, just add 1 sweet potato, 3 slices of bacon, and 2 eggs for each additional person! 



1. Cook the bacon in a large skillet on medium high heat.

2. While the bacon is cooking, peel the sweet potatoes and cut them into small squares (about 1/2 in. in size). **Update: I found an even faster way to do this! Peel and quarter your sweet potato, then put it into a high powered blender (I use my Vitamix) or food processor for about 5 seconds and whala! You will have perfectly sized sweet potato chunks to fry up!

3. Remove bacon when done to your liking and  now add the sweet potato chunks to the same pan that the bacon was in with the bacon grease (you can take a little bacon grease out by soaking it in a paper towel if you want less... but I say more bacon grease = more flavor)! Sprinkle them with salt, pepper, and a little garlic powder. Stir them every couple minutes to evenly cook them. If if you have a lot, you can put a cover on the pan to speed up the cooking.

5. While the sweet potatoes are cooking, begin cooking the eggs. I cook them over easy for this meal. In order to do that, put a little olive oil on the bottom of the skillet. Once hot, crack the egg and put it in the pan. Season with salt and pepper. Let it cook for a couple minutes until almost all the egg white has set and then flip it over (very carefully). Cook for 20 seconds, flip back, and you have a perfect over easy egg! **Update - lately I've been adding in two handfuls of spinach at g with the sweet potatoes while the eggs are cookin to get some extra nutrients and veggies in! It's delicious and I highly recommend it!

6. Once the sweet potatoes are finished, quickly chop up the bacon into bite size pieces and add back to the sweet potatoes, giving it one good stir to mix. Then portion out your sweet potato/bacon/spinach mix on a plate, adding the 2 eggs to each plate at the end.
